We hand cut all of our granola bars, and when the trimmings start to add up, I take some home and make the most delicious overnight oats. I've always loved how the Nutty Morning granola bar reminds me of a "healthy" Basic 4 type of cereal that I used to love as a kid. The crunchy nuts and coconut, tied together with the sweetness of dates is so nostalgic for me. So I find them to be perfect in overnight oats. I've also asked a lot of muesli lovers about their favorite muesli combination, and they often list off the ingredients in the Nutty Morning granola bars. You may want to add more nuts, seeds and/or dried fruit to this recipe. I say, "Go for it!" This is just a basic template for simple overnight oats that really get taken to the next level by the complexity of the Nutty Morning granola bar.
½ Nutty Morning Granola bar, or your favorite kind
½ c rolled oats
½ t chia seeds
Milk of your choice
Fresh fruit for topping
Break the half granola bar into pieces and put into your favorite jar for overnight oats. Add rolled oats and chia seeds and mix until combined. Cover with the milk of your choice. Cover the container and chill overnight.
Top with fresh fruit in the morning and enjoy.
