This no-bake cookie is a super easy solution for your next Christmas cookie exchange. Or it's a quick dessert to whip up for the family on a weeknight. Anything peanut butter is always a winner, and the granola stays beautifully crunchy. I thought they might completely melt at room temperature, but they keep their shape perfectly. Yum!
Ingredients
¾ c butterscotch chips
¾ c smooth peanut butter

2 c Coconut Grove Grain-Free Granola
3 T chocolate chips, for decorating
Directions
In a medium sized sauce pan, add the butterscotch chips and peanut butter. Over medium-low heat, stir the two together until melted.
Remove from heat and add the Coconut Grove. Stir until evenly coated.
Scoop individual cookies onto a parchment-lined sheet pan. Move the sheet pan to the freezer and chill for 10 minutes.
In a microwave safe glass bowl, melt the chocolate chips for a minute or two in the microwave. Stir the chocolate together to make sure it’s all melted.
Drizzle the melted chocolate over each cookie. Chill the cookies in the freezer for 5 more minutes.
Store cookies in the fridge until ready to serve.
