I developed this recipe over an especially hot weekend in LA. I thought the popsicles would be a great snack for the kids, but I ended up eating all of them. They were just the perfect 3pm snack when I wanted something cold and refreshing. They are also a fun frozen breakfast. Using plain yogurt makes for very tangy popsicles, despite the banana and sweetness from the granola. You may prefer to add a couple tablespoons of honey or maple syrup to smooth out the tang of the plain yogurt. I would also recommend enjoying these popsicles within a week. I've found that yogurt doesn't hold up well in the freezer for long stretches. It makes me wonder how people felt about their granola bark after a while. You can use any type of granola you like in these popsicles. Enjoy!
Ingredients
1 banana, mashed
1 cup plain yogurt (I like whole milk)
-
1 ½ cups Honey Run granola, or your favorite flavor
Directions
Mix all ingredients together. Spoon mixture into popsicle molds. Freeze overnight and enjoy in the morning!
