We fell in love with this sundae during the LA Heatwave of 2022 (or one of the many). While all of our granolas are delicious topping for ice cream, Coconut Grove, with it's crispy coconut and assorted nuts might be our favorite. As a former pastry chef, I love the idea of making the entire sundae from scratch, from ice cream to granola to caramel to whipped cream. Instead, I've just included the recipe for homemade caramel sauce here because that is a relatively easy and totally worthwhile homemade treat to have around at all times. Be sure to make the caramel well in advance of serving the sundae because it needs time to cool.
The salty caramel with the crispy coconut and maple-glazed nuts is heavenly with a simple vanilla ice cream and subtly sweetened whipped cream. Oh yeah, homemade whipped cream is also highly recommended, but you can probably figure that out for yourself. (Just whip cold cream with a dash of sugar and vanilla extract.) Enjoy!
Ingredients
¾ cup sugar
½ cup heavy cream
¾ cup butter (1 ½ sticks), cubed
½ t kosher salt
1 t vanilla extract
Vanilla ice cream

For the caramel:
Put sugar in a pot and add water until the mixture resembles wet sand. Heat slowly on the stove until the sugar is completely dissolved. Bring to a boil until the sugar starts caramelizing. (This can happen fast, so turn the heat down once the sugar starts getting darker so that it doesn’t burn.) You want to let the caramel reach a lovely amber color for the flavor but not to let it burn.
Move the caramelized sugar off the heat and add the cream in a slow stream, as the sugar will bubble furiously.
Add the butter one cube at a time, whisking the caramel. It will stick to the whisk but will dissolve when returned to the heat. Add salt and vanilla extract.
Return caramel to the heat and continue to cook on medium until the harden sugar is completely dissolved and the caramel has thicken a bit. Remove from the heat and allow it to cool. It will thicken as it cools.
For the sundae:
Scoop ice cream into a bowl. Top with cooled caramel sauce. Sprinkle with Coconut Grove Granola. Add a dollop of whipped cream. Put a cherry on top and enjoy!
